Danny has been a commercial chef for 20 years, specializing in Modern Australian cuisine that draws on both his Peruvian and Japanese heritage. Growing up in his family Japanese restaurant kitchen in Coastal Peru and his constant travels trough out south and Central America has provided him with a sound base for his diverse and unique food repertoire.
Moving to Australia at age 15, Danny has worked in some of the country’s most reputable restaurants, including Upper/Lower House, Waterfront restaurant, The Trust and The European.
Danny is a regular sell-out at the Queen Vic Market Cooking School, where he is fast gaining a reputation for presenting great cuisine in a relaxed and entertaining atmosphere.
Danny is now based at La Bodeguita del medio Sydney, and has work to created his own brand of modern Latin American cuisine.
The menu at LBDM is a reflection of Danny’s childhood and growing in up South America.
