Hellenic Republic’s Cypriot Grain Salad

One of our members Caroline won a chefmasterclasses.com  competition, and enjoyed lunch at Hellenic Republic with Travis McAuley and George Calombaris.  Caroline said this Cypriot salad was her favourite dish of the day…
Here is it, give it a go!
 
Cypriot Grain Salad

1 bunch coriander shredded
½ bunch parsley shredded
½ red onion finely diced
1 cup freekah (or cracked wheat)
½ cup puy lentils
2 tbsp toasted pumpkin seeds
2 tbsp toasted slivered almonds
2 tbsp toasted pine nuts
2 tbsp baby capers
½ cup currants
Juice of 1 lemon
3 tbsp extra virgin olive
Sea salt to taste
1 cup thick Greek yoghurt
1 tsp cumin seeds toasted and ground
1 tbsp honey

    This Cypriot Grain Salad is THE BUSINESS – one of the most delicious salads that I have ever eaten. I dont mix the dressing through until right before Im going to eat it to keep it fresh and nicely coated.

    Hi there, sorry to be so dense, but where can I find the method for the Cypriot Grain Salad – all I can see are the ingredients…?

      Blanch freekah and puy lentils separately in boiling water until both just cooked.
      Drain well and allow to cool.
      Mix the yoghurt, cumin and honey till combined.
      In a medium bowl place the coriander, parsley, red onion, freekah, puy lentils, toasted nuts, capers, currants, lemon juice and olive oil. Mix well, season to taste.

    I’ve had this salad as part of the set menu – and of all the things we tasted, this salad was truly memorable! Can’t wait to make it at home. Oh, and return to Helenic Republic, of course!

    I was given this recipe and loved it!! We added wild rice (cooked wild rice, freekah and lentils in some stock) and added seeds of a pommegranate – winner!!

    My daughter (6 at hte time) begged to go to Georges ‘other’ restaurant after spending her birthday at the press club, so i headed into Hellenic Republic with her and my sister for her prep graduation, my sister and i almost got into a fist fight over who would finish this salad. Absolutely amazing stuff
