Vanessa’s Spinach and Chicken Wraps

Spinich and chicken wraps. (Chicken optional).

Turn oven on to 180-ish.

This recipe I just sorta threw together one night so ingredients don’t need to be exact.

Ingredients:
1-2 breast chicken cubed – depending on how many mouths to feed.
1 onion chopped.
Two cloves garlic.
A whole bunch of spinach chopped.
Cheese – as much as you like!
Tortilla wraps – 1 pack of 6
Favorite chunky pasta sauce or two cans chopped tomatoes, onion and garlic (and basil if you so desire).

Method:
Fry chicken and onion in a hot pan with a wee bit of oil until chicken is golden .
Add garlic and spinich.
Cook till spinich is wilted and garlic smells amazing.
Put to one side to stand while you get a long dish and tortillas.
Spread mixture onto one side of tortilla and add lots-a cheese to the top of the mixture then roll up.
Repeat this untill mixture is gone or tortillas run out.
When the wraps are lying in the long dish pour over sauce and make sure there is enough to cover them all. If unsure, add hot water to sauce before pouring on.
Top with cheese and put it all in the oven untill the tortillas are very soft and cheese is golden.
Dish up with salad and enjoy!!!

(Ps- you can do this recipe with canelloni pasta tubes but takes longer and you need more sauce). Just have fun with it!
