This is the recipe for Robert’s ice cream pudding. Good for all year round!
- Marinate about two cups of mixed dried fruits (I also added apricots) in your favorite liquor (I used brandy) for about 3 days.
- Purchase 3 different good quality flavored ice creams (I used vanilla,choc & s’berry)
- Line a large glass or ceramic bowl with glad wrap.
- Then line the bowl with one flavor of the ice cream at near room temp so that it’s pliable, & create a well in the middle,cover & put back into the freezer for an hour.Repeat the process with the next two layers of ice cream putting them back into the freezer for an hour each time.
- Meanwhile whip your cream adding vanilla bean or essence.Or even Baileys Irish cream.
- Fill the well in the middle with the fruit & top it off with a small amount of ice cream.
- Then turn the bowl upside down on your serving platter taking away the bowl & peeling off the plastic wrap,coat the outside with the whipped cream smoothing it all over & top it off with slithers of almonds & some red berries. If the serving platter has a wide brim you could also add some berries around the sides.
