Robert’s Christmas Ice-Cream Pudding

This is the recipe for Robert’s ice cream pudding. Good for all year round!

  1. Marinate about two cups of mixed dried fruits (I also added apricots) in your favorite liquor (I used brandy) for about 3 days.
  2. Purchase 3 different good quality flavored ice creams (I used vanilla,choc & s’berry)
  3. Line a large glass or ceramic bowl with glad wrap.
  4.  Then line the bowl with one flavor of the ice cream at near room temp so that it’s pliable, & create a well in the middle,cover & put back into the freezer for an hour.Repeat the process with the next two layers of ice cream putting them back into the freezer for an hour each time.
  5. Meanwhile whip your cream adding vanilla bean or essence.Or even Baileys Irish cream.
  6. Fill the well in the middle with the fruit & top it off with a small amount of ice cream.
  7. Then turn the bowl upside down on your serving platter taking away the bowl & peeling off the plastic wrap,coat the outside with the whipped cream smoothing it all over & top it off with slithers of almonds & some red berries. If the serving platter has a wide brim you could also add some berries around the sides.
